Guajillo chili pepper

The guajillo,cascabel or catarina chiles all belong to the group known as the mirasol chiles. The guajillo from  Mexico is a beautiful russet red,translucent, thin-walled dried chile,measuring between 10-15 cm in width. Most chiles grow hanging downwards. Guajillo grow upright,earning themselves an alternate name mirasol.Its delicate flavour makes it a favourite, especially for colouring,in all forms of new world cooking.
